How To Use Instant Yeast For Doughnuts

How to use instant yeast for doughnuts. And then in your stand mixer with your paddle attachment you want to combine the dry ingredients flour yeast and salt. If using an instant yeast your rise time will be a little shorter. Gradually add to flour mixture.
Only put a couple in at a time so they have plenty of room to float. Unlike dry instant yeast the fresh yeast must be activated first before mixing it into the doughnut dough. In a saucepan heat milk sugar butter and salt until butter melts.
Beat 2 minutes at high speed. Combine 1 cup flour sugar undissolved yeast salt and nutmeg in a large mixer bowl. Allow to fry for about 2 minutes then flip them over to cook the other side.
If the yeast isnt bubbly it isnt active and the donuts will not work. Place cut donuts and donut holes on to a lightly floured parchment on a baking sheet. Sugar sweetens the doughnuts but it also feeds the yeast.
Scoop the dough out gently on to a floured surface. If using a stand mixer run with the dough hook until a dough forms then continue for about 5 minutes. Cut out the donuts using donutcookie cutters or improvise as I did with a large mason jar ring lid for the outer edge and a small shot glass for the inner edge.
